Tuscan Shrimp with Alfredo Sauce


So I love pasta with shrimp, not sure why but I do.  So I came up with a recipe I could have that would have both iron in it like my doctor ordered.  So I came up with a recipe called Tuscan Shrimp with Alfredo Sauce.   It came out amazing and my family is already asking for next time.  You can do this on the stove too if you don’t have an Instant Pot.

Tuscan Shrimp with Alfredo Sauce

What you need to feed 4 people

1 lb of shrimp
1 jar of alfredo sauce (I got roasted garlic)
2 cups of fresh spinach
1/2 cup of sun-dried tomatoes
1 box of pasta noodles
1 tsp  Tuscan seasoning.  I found some in the bulk area of the store.

If you can’t find Tuscan seasoning normally it is made from

  • 2/3 cup oregano.
  • 6 tablespoons kosher salt.
  • 5 tablespoons paprika.
  • 4 tablespoons ground fennel.
  • 4 tablespoons garlic powder.
  • 3 1/2 tablespoons dried minced onion.
  • 2 tablespoons cayenne pepper.
  • 3 tablespoons sugar.

How to make 

First, you cook the pasta in the Instant Pot. One box pasta to three cups of water.   I cook for 5 minutes on high pressure. Then I naturally release.
 Once the lid is off, I will turn the Instant Pot into simmer mode.  
Next, I place in the sun-dried tomatoes, Alfredo sauce, and shrimp.
Once you notice your shrimp turning slightly pink you will add
in your fresh spinach with the Tuscan Seasoning.  
Once the spinach is soft and your shrimp is pink you are ready to eat.  You might taste first and see if you feel the pasta needs more Tuscan seasoning.  Each person is different so you have to season to your liking.
