How I love my southern food. It is something I will eat daily if you feed it to me. So when I went to make my famous side Southern Style Tomatoes and Okra in the Instant Pot this week, I thought to myself why don’t I save myself some time and cook it in my Instant Pot. It could make the time go faster and could taste better.
Instant Pot Okra with Tomatoes
Normally I cook this recipe for 2.5 – 3 hours on my stove but with my Instant Pot, it was done in half an hour. The okra will make the tomatoes and okra thick like they are supposed to be, and you will love this recipe when garden fresh vegetables arrive in the summer months.
Ingredients for Instant Pot Okra with Tomatoes
2 cups of fresh Okra, diced
1/2 cup of onion, diced
1 can of tomatoes, diced (we used fire roasted)
2 tsp of Tony Chachere’s (if you prefer, you may use Penzeys Cajun seasoning but increase to 3 tsp)
1 cup of water
Salt and Pepper
Directions for Instant Pot Okra with Tomatoes
Prepare your vegetables by dicing your okra and onion into small pieces
Add the okra, onion, tomatoes, seasonings, and water to your Instant Pot Liner
Stir well then close the Instant Pot lid and set to seal
Set to manual pressure cook mode for 30 minutes
When the cooking cycle is complete, allow to naturally pressure release for 10 minutes.
Release any remaining pressure
Open and stir before serving

Can I use frozen okra for this recipe? How do I adjust the recipe?
Yes, you can use frozen. If you use frozen you might lower the water to 3/4 of a cup since frozen okra puts off a lot of water.
