Recipe Ingredients

Cauliflower - A medium head of cauliflower works best. Using your food processor to cut it into pieces will speed up the prep time tremendously.

Olive oil - You can also use coconut oil or avocado oil as well. You can add a little more than 1 teaspoon if needed.

Scallions - Chop them up so that they're not a big texture.

Salt & Pepper - To taste.

Garlic powder - Minced garlic would also be really good!

Onion powder - Just a little bit pairs really well with the rest of the ingredients.

Lime juice - Fresh lemon juice could be a great option also. Optional.

How to make Cauliflower Rice

All you need are the simple ingredients listed above to get started! You'll have hot and fresh cauliflower rice in no time at all!

Step One: Chop up the head of cauliflower or put it into the food processor to let it do all the hard work. Put it into a bowl to have ready to pour into the Instant Pot.

Step Two: Add the olive oil to the Instant Pot.

Step Three: Press the saute button for 5 minutes.

Step Four: Pour in the diced cauliflower and scallions. Add the salt and pepper and the rest of the ingredients and stir.

Step Five: After 5 minutes have passed, serve and enjoy!

Variations

Use different seasonings - The great thing about cooking up riced cauliflower is that you can make it taste like whatever you want. Seasonings like chili powder add heat, or you can add Everything Bagel Seasoning, too.

Add butter - I'm a sucker for adding a little bit of butter to any of my rice recipes.

Add cilantro - Fresh cilantro is the perfect ingredient to give the rice a refreshing taste.

Recipe Notes

  • Don't be tempted to use frozen cauliflower rice. Can you? Of course - but it won't taste the same as chopping up a head of cauliflower.
  • If the rice is dry when it's cooking in the Instant Pot, you may need to add a tad bit more oil. You can also pour in a smidge of bone broth as well for flavor.
