Pozole for Instant Pot


If you have never had this then I am going to tell you are missing out on.  This recipe is simple and if you don’t have an Instant Pot you can slow cook and it taste great as good.  This recipe will make enough for 6-8 people and what I normally do is make then freeze half of it for another day.

What you need


  • 4 pounds pork butt, cut into 1 1/2-inch cubes
  • 2 cloves of garlic
  • 1/2 onion 
  • 4 cups of water 
  • 3 cups of chicken broth
  • 2 cans of hominy, 28 oz can
  • 4 tsp of chili powder
  • 4 tsp of cumin
  • 1 lime squeezed
  • 1 can of tomato paste 
  • Salt and Peper
  • Chopped cilantro, chopped red onion, chopped jalapeño and lime wedges for garnish
  • If you like your FOOD spicy you can add the jalapeno in when you cook.

How to make

You throw EVERYTHING in the Instant Pot but the hominy. 
You will cook for 25 minutes then add in the hominy in after you cook.
 Then leave your Instant Pot on warm for 10 minutes. 
Garnish items you can use: chopped cilantro, chopped red onion, chopped jalapeño
and lime wedges for garnish.  


If you only have a Crock-Pot that’s fine. All you have to do is for 7-8 hours on slow.  Just add the hominy the last hour so it doesn’t get mushy. 



  1. How many does this serve? I live alone but love pozole and wanted to try making it. Four pounds of port butt is WAY too much for me. I know I can freeze some but I’d rather know how to cut this in half.

  2. In reference to the earlier question about the amount of hominy, please clarify. Is it a single 28 oz can of hominy, or is it 2 cans 28 oz each of hominy?
