Instant Pot Ham Gnocchi Soup

Soups are a stable for winter in any household.  The funny part is I used to hate to eat soup as a kid. Now I eat it weekly.  So one of my favorite recipes is Gnocchi Soup but I hate going to Olive Garden and spending more money on a bowl of soup as I would if I made it for my WHOLE family.  So I finally sat down and made it this week in my Instant Pot and it came out so good I am sharing my recipe t3ijprm.   The only change is I used ham, not chicken because the ham was on sale for cheap and I needed to use it from my fridge.

Instant Pot Ham Gnocchi Soup

  • 1/2 stick of butter
  • 1 tablespoon of oil
  • 1 cup of onion
  • 2 tablespoon of garlic
  • 1/2 cup of celery
  • 3/4 of shredded carrots
  • 1 cup coarsely chopped fresh spinach leaves
  • 1 quart of half and half
  • package of gnocchi
  • 2 cups of ham or chicken
  • 1/2 cup of flour
  • 28 oz of chicken broth
  • Spices you need are
    1/4 teaspoon of parsley flakes
    1/2 teaspoon of thyme
    salt and pepper

Turn your Instant Pot on to Saute mode and cook your onion with your oil and butter till the onions are translucent.  Next you will add in the flour and cook for about a minute.  Add in your half and half and stir in till you notice it gets thicker.  Now add in your broth, salt, pepper, the thyme, parsley, carrots, spinach, chicken, and gnocchi.  Now close your Instant Pot and let cook on high pressure for 4 minutes.
