Instant Pot Corned Beef

St. Paddy Day is an important day for us. I cook my husband his favorite food which normally takes all day. So I thought I could shorten it with my Instant Pot. So I tried and it came out amazing and now I’ll share how I made.
What you need to feed 3 people comfortable.

Corned Beef 2lbs
Will come with a seasoning package
2 cups beef broth
1 cup water or can Guinness beer
2 bay leaves
2lbs of red potatoes
1.5lbs of cabbage

How to make
First, check your corned beef, it is more than 2 inches think in any spot you will need to cut so it is not so think and it will help make the beef more tender also.

First I wash off my corned beef and place my liquid in the Instant Pot.
Now, sprinkle the whole top of the corned beef with the seasoning package.
I also added in the bay leaves.
Now I turn my Instant Pot on to manual mode and cook for 75 minutes.
I do a natural pressure release on the Instant Pot, I check the beef with a corn and it should be easy to poke.  If not done you can close back up and turn back on for 10 more minutes.
Once you feel happy about the corned beef you can take out and place on a cutting board.
While that cools down some you will add your potatoes in and cabbage in and let cook for 7 minutes.
Once the timer goes off you do a quick release and at that time you can cut up your Corned Beef.

If your Corned Beef doesn’t come with seasoning here is a what the package includes or you can get some pickling seasonings.
Pickling spices:
1 Tbsp whole allspice berries
1 Tbsp whole mustard seeds (brown or yellow)
1 Tbsp coriander seeds
1 Tbsp red pepper flakes
1 Tbsp whole cloves
1 Tbsp whole black peppercorns
9 whole cardamom pods
6 large bay leaves, crumbled
2 teaspoons ground ginger
1/2 stick cinnamon

  1. Is there a rule of thumb for increasing cooking time for a bigger corned beef? I think most of them around here are usually in the 3-4 lb range.
