So as y’all know already I have a busy life just like everyone else. So when it comes to making dinner every night it isn’t always the easiest task. So what I started to do to help me and my family is over cooking then freezing. So from here on out I will be doing a few post to show y’all meals you can make then freeze the leftovers for a later date.
Chicken Tortilla Soup, this will make 3 soups!
What you need-
10lb bag of chicken quarters (look for on sale best time to buy)
(normally I season with chili powder and cumin)
Either fresh garlic cloves or diced up already
2 large onion diced
1 large can of diced tomatoes (100+ oz)
2 jalapeno
1 large bag of frozen corn
salt/pepper
2 lime
3 cans 24 oz chicken broth
1 bunch of cilantro
How I put together-
So first I cook the chicken, once the chicken is cooled I peel it off the bone. Next I get out 3 baggies. I place the chicken in the baggie, next I get the rest of the ingredients and split them into thirds. Place them into baggies and then seal up. Yes I know you think I am missing broth but here is the think I don’t add till I cook. The baggies can sit in the freezer up to 3 months and a great for a nice cold day. Also you might grab avocado and cheese to eat with when you serve. When you make you will need to add 8 – 16 oz more water and cook till hot, then let it cool down some and eat.
