Ingredients

  • 1 tablespoon olive oil
  • ½ onion chopped
  • 1 bell pepper chopped
  • 1 andouille sausage pieces
  • 4 garlic cloves chopped
  • 2 celery stalks chopped
  • 1 carrot peeled and chopped
  • 1 tablespoon salsa
  • 1 teaspoon oregano
  • ¼ teaspoon sage
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 lb red beans
  • 4 cup vegetable broth
  • 2 sprigs thyme
  • 1 cup cooked rice for serving

Instructions

  • Press "saute" and add olive oil.
  • Add chopped garlic and onions into the pot and saute for 5 minutes.
  • Add chopped sausages, bell pepper, celery, and carrots, and stir well.
  • Add salsa, oregano, sage, salt, black pepper, vegetable broth, thyme, and red beans and stir well.
  • Close the lid and cook on high pressure for 40 minutes.
  • When cooking time is complete, wait for a natural release for 20 minutes.
  • open the lid and serve over rice.

  2. The recipe does not mention the carrots that appear in the video, the printed recipe shows spices to be 1/4 Tbsp (tablespoon) while video shows 1/4 tsp (teaspoon). This is a considerable difference.
    SO unclear about soaking the dried beans. I cooked the beans first after reading this over and over. Now I see they just needed to be soaked.
    Good grief.
    I need better instructions than this.

    1. Hi Pamela, so sorry about this. Sometimes I change the recipe a little bit when I make it again which accounts for these differences. I updated the recipe amounts and added carrots to be more consistent. Although, the recipe tastes great with or without carrots and you can adjust seasonings to your preference. I hope that helps!

    1. Yes, the beans need to be soaked first because this recipe doesn't contain enough liquid to add dried beans without pre-soaking. I would soak for 6 hours or overnight.
