Easy One Pot Enchilada Pasta (Instant Pot)

If you are looking for a one-dish meal for the kids (or, even for you!) this is an amazing dinner.

Our kids love this – and paired with a nice crusty bread with butter it’s great for an easy dinner!

 We make our own enchilada sauce here at home and freeze it in ball canning jars – but if you don’t want to make your own, you can purchase a can of enchilada sauce in store… the recipe calls for 12 oz (so just under a can.).

Don’t want to have any leftover sauce in the can? Just dump the whole can in – it won’t do the pasta any harm.

An easy, one pot meal that combines ground beef, enchilada sauce and pasta for a meal that will wow the family.

  1. 8 oz pasta (we used gluten-free)
  2. 1/2 lb ground beef or ground turkey
  3. 1 C. shredded cheese
  4. 12 oz enchilada sauce
  5. 2 C. broth (can be beef, chicken or veggie)
  6. 2 Tbsp seasoning (taco or any)
  7. salt & pepper (to taste)
  8. Optional: 1/2 C. sour cream
  9. Optional: black olives
  1. Brown the meat with the seasoning in your instant pot using the saute function.
  2. Add the broth, pasta and enchilada sauce to the pot. You want the liquid to just barely coer the pasta - if it doesn't, add a little more broth.
  3. Place the lid on the pressure cooker, close the valve and set the pasta on high pressure for 4 minutes.
  4. After it beeps, let it release naturally for 3-4 minutes, then quick release the instant pot.
  5. Stir in the cheese and salt and pepper to taste.
  6. Optional: Top with fresh Mexican queso, or black olives. You can also stir in 1/2 C. sour cream if you want to make it a little more creamy.
  1. Take it a step further and add black beans OR corn to your pasta... and add them in to the pot when you add the pasta.

  1. So is this recipe possible to make without an “Instant Pot”? I don’t actually know what that is or own one. And I know I don’t have a pressure cooker, so is it possible to just cook the noodles separately then combine later?

    • Yes.. if you don’t have an Instant Pot you could make the Pasta separately. Then mix in the other items when it’s done. Very easy! 🙂 My kids love it, and I’m sure yours will too.

    • I’ve made this with the instant pot and on the stove. Both ways turn out great! The stove version is quicker. If you want to make this on the stove, follow the directions except make it all in 1 pot on the stove instead of the instant pot. You cook it until the noodles are done. By making it all in one pot, the pasta cooks in the liquid of the recipe and absorbs the flavor. For our family, we triple the recipe and use an 8 quart pan or an 8 quart instant pot. The only fudge from the recipe is that I use 2 lbs of ground beef instead of 1.5 lbs.

  2. I just finished adding all the ingredients and set the timer for the Insta-pot. I am a little confused about the timing. At the top of the recipe it says cook time is 10 min. The in the text of the recipe it sets to set the time for 3-4 min. I guess I will find out in a few minutes. I added a little dried onion to the mixture and a small can of diced mild green chiles because I really like the flavor. I had a 14 oz package of cooked grd beef in the freezer so I used it all. I bought my favorite enchilada sauce which is the mild green sauce. Then I got to thinking maybe I should have bought red enchilada sauce, but I had to use what I brought home.

      We have the cook time for 10 minutes to account for the time it takes to come to pressure. It’s a tricky one.. in the past, we have just mentioned the 4 minute cook time, but then some folks get upset because we don’t include the time that it takes for the IP to come to pressure.
