It is a Sunday and I am meal prepping for my week. This week I will be making shredded chicken with Borracho Beans in the Instant Pot and rice for my husband. Before we my Instant Pot we could have to sit around all day and cook in my crock pot but now it takes two hours to cook all my food and have in the fridge for the next day. [Read more…]
Fall food is my favorite. It brings warmth to my stomach when it is cold outside. So when I figured out I could make baked apples in my pressure cooker I had to share with y’all my personal recipe. It is SO easy and only took me about 10 minutes from start to finish. This will feed 2-3 people.
I used 4 medium apples
2 tsp of honey
2 tsp of cinnamon
1/2 cup of water
First, clean your apples in the sink.
Then cut your apples into slices, removing all seeds.
Toss your apples, honey, cinnamon and water in the pressure cooker.
Mix up all of the ingredients.
Place lid on the pot, then turn on manual mode for 2 minutes.
Once the timer goes off open the valve and let the pressure release.
Once all pressure is gone, open the lid.
Next mix up the apples again and then serve.
If in the summer we serve over some vanilla ice cream.
I love to make homemade food for family dinners. So when my family got together for Mother’s Day I made some bubba beans. I will warn you in advance that it does take about 90 minutes with prep and cook time. Once you eat you will feel it is worth the time it takes to cook. This recipe will feed 10-12 people as a meal or a lot more if at a potluck.
1lb of ground beef
1/2 cup of cooked bacon
1/2 cup of diced onion
1/3 cup of brown sugar
1/3 cup of white sugar
1/4 cup of ketchup
1/4 of BBQ sauce
4 tbsp of mustard
2 tbsp of molasses
1/2 tsp of salt
1/2 tsp of chili powder
1/2 tsp of pepper
1 lb of uncooked kidney beans
1 lb of uncooked butter beans
First, you will start with the ground beef. You turn your Instant Pot onto simmer mode. After the meat is completely brown the meat and then you will add in the rest of the ingredients other than the beans. Once they are in the pot you will mix up the ingredients well with the ground beef. Once they are mixed up well. You will scoop or pour the ground beef mixture into another bowl. Place on the side to add in after the beans are cooked. Next, you will get 7 cups of water and the beans and place them in the Instant Pot. Once the beans and water are in your Instant Pot you will close the lid. Turn your Instant Pot onto manual mode for 75 minutes. Once the timer goes off you will do a quick release. Once you can open the lid you will mix up your beans and then then add in your ground beef mixture back into the Instant Pot and mix up well. Now you can serve with cheese or diced onion.

Creamed Corn is one of the most popular dishes around Thanksgiving – and while we are definitely many months away from the next Thanksgiving holiday, that doesn’t mean you can’t make it at home any time.
Creamed corn is something that can be made in the Crock Pot over a 3-4 hour time period – but if you are in a crunch for time, making it in the Instant Pot is relatively easy, too.

A little cream cheese, some organic canned corn, salt and pepper, milk and butter is all it takes to whip this dish into fruition.
You’ll want to use LOW pressure instead of high pressure – to use low pressure, click manual, and then push the pressure key twice to change it from high to low.
Serve immediately.
Fair warning ~ you will go back once, twice, maybe even three times for more, in fact, you might just want to inhale an entire plate of creamed corn.
You won’t be able to resist the buttery goodness.

One of the best reasons to have an Instant Pot is to allow yourself the ability to have an extra appliance to be able to make healthy and effortless meals.
If you don’t have an Instant Pot, there are 1,001 reasons to buy one – not only do they do the job of a slow cooker, they have several other functions, too. My favorite thing about this Instant Pot is the ability I have to put the food in, push a button, and walk away.
With 5 kids, I always worry about them climbing on the counters, touching stove tops, and getting into things they shouldn’t – but with this pot, they can’t….
And that is pretty awesome.

Now, lets talk about Mushrooms. These button mushrooms are such an amazing item to pick up at the farmers market. If you were to go eat at the Outback Steakhouse you would pay dearly for these mushrooms – and in all honesty they are SO easy to make yourself.
A few minutes.
A few ingredients.
And bam! They are done – just like that The best part is that they are full of flavor, with few ingredients, and a wonderful last minute side dish to a nice steak or dish of chicken. Every time we whip these up in the kitchen they disappear in minutes.
That might partly my fault…
In truth, it’s mostly my husband. He an’t help himself… it’s almost as if they are as tempting as M&M’s. Our lovely CSA allows us to add mushrooms for just a few bucks a bag – and they are pesticide free, and organic. I love the fact that we can take something SO simple and transform it into something incredibly amazing.
I LOVE these mushrooms!
If you happen to have a little butter at home (maybe you make your own) you can use that instead of extra virgin olive oil. No matter what you use though, they will turn out fabulous. Double the recipe if you want to make sure you get a second helping because they will go very fast.
Crank out these mushrooms for your family and let me know how you like them ~ come back, leave a comment or post on our Facebook page. We’d love to see the results!

Cooking in the kitchen has taken on new meaning – all because of ONE appliance. Funny how that works – right?!
It’s not that I didn’t enjoy cooking before… because I did. But this one appliance just made it incredibly FUN to be in the kitchen. Pull me out now well… that might be hard. I love to be in the kitchen.
I have personally had my Instant Pot since December, 2015 – and I can’t honestly say I have missed cooking in the Instant Pot even for a single day. Sometimes I wish I had a few of them in order to get more accomplished, but for now it’s just me and this single appliance.
Fun times 😉
Beans are one of the most rewarding things to make in the Instant Pot – because face it: before this appliance, most of us were making them in our Crock Pot, or… boiling over a hot stove. I live in Phoenix, so boiling over a hot stove is NOT an enjoyable activity in the summer when you are trying to keep your electricity bill down – the extra heat in the house makes everyone sweat buckets, and therefore doesn’t encourage anyone to really cook much of anything.
Welcome Instant Pot.
If you haven’t used it to make beans, you are in for a fun time – it’s SO incredibly easy. Dump, twist and open – that’s basically it!
Dry beans can cook in your Instant Pot in just 40 minutes (more or less). If you opt to soak your beans (and we often times do) it cuts the time down even more – between 20-25 minutes is sufficient. You will want to soak them if you have a hard time digesting them – soaking is actually preferred because it cuts down on the phytic acid content.

Mashed potatoes are the ultimate comfort food – I don’t think I know too many people who don’t love sitting down with a huge bowl of buttery mashed potatoes with a nice thick steak, or roast. Potatoes are actually one of my kids favorite side dishes.
Using your instant pot for side dishes is one of the advantages of having the appliance – when my instant pot is occupied (making yogurt) I feel lost – I rely on it so much for my dinner meals that I can’t bear to be without it.
One of the easiest things to make in the Instant Pot is mashed potatoes – while you can make mashed potatoes on the stove, it involves boiling potatoes.. with the Instant Pot, it’s nearly effortless. A little water, put the potatoes in, lid on and within minutes they are done.
No more standing over a hot stove for 20-25 minutes
We have a beautiful Rosemary bush in the front & backyard – if you don’t have one, I suggest picking one up – it keeps away pests when we enjoy time outside, and I can pull fresh rosemary off of it any time (just like this recipe above).
We make our own butter at home from raw heavy cream direct from the farm… which is full of flavor, and amazingly wonderful for you.
Can’t make your own butter? Pick up butter in your local store – avoid using anything less than butter (margarine).
