So when life is hard I make comfort food like crazy. So you might notice me leaning to more soups and hearty food this next month. For this Beef Pot Roast recipe, I made it because it warms me from my fingers to my toes.
Also a few days ago my neighbor lost his wife and I wanted to make him something that would bring him some comfort during this time. I know that he is sad to love the love of his life. Today they would have been married 53 years and I can only dream that my husband and I last that long to see our 50th anniversary.
Beef Pot Roast in Instant Pot
So here is my recipe and I hope you make it and brings you comfort like it did me. If you are needing comfort at the moment.
What you need to make enough for 4 people
3lbs of Beef Shoulder Meat
3lbs of potatoes (you can use red or new or a mixture)
1.5lbs of baby carrots
2 tsp of minced garlic
1 small onion sliced
2 cups of chicken broth
PLUS of course, your salt and pepper.
Optional: If you like thicker you can add 1tsp of cornstarch.
How to make
First place you place your roast on the bottom of your Instant Pot
then simple add the onion and garlic on top.
After that you add in your carrots and potatoes, salt, pepper and broth.
Turn on for 55 minutes and left cook.
Once done release the valve and enjoy with some buttered bread. If you are adding the corn starch place 1/2 cup of the broth in a bowl and mix in the starch till all the clumps are gone. If you feel the meat is not tender enough close the lid and turn back on for 10 more minutes.
If you only have a slow cooker that is okay. You can cook it in there just simple and cook for 4 hours on high or 6-8 hours on low.
