Pineapple is a wonderful way to dress up plain, white rice – which cooks in mere minutes in the Instant Pot.  

If you are looking for a tropical way to dress up dinner, an 8 oz can of crushed pineapple can do the trick – it is one of the most simple ways to pack the biggest punch in flavor. Even better, substitute the water for coconut milk for an even richer flavor.

We jumped on the Instant Pot bandwagon in December of 2015 – and we haven’t looked back once. It’s one of the easiest, and most forgiving kitchen appliances. Not only can it help us whip up rice in a matter of minutes, it can cook meat, beans, lentils and more in a fraction of the time that a conventional crock pot or oven can. Not to mention, ours has 7 functions wrapped into one.

Throw out that slow cooker – you’ll fall in love with this Instant Pot!

  1. 1 C. white rice
  2. 1 C. water
  3. 1/4 C. pineapple juice
  4. 8 oz can crushed pineapple (keep the juice towards the 1/4 C. needed in the recipe)
  5. 1 Tbsp butter
  6. Optional: cilantro (garnish)
  1. Add all items (with the exception of cilantro) in the Instant Pot.
  2. Place the lid on the pot and close the valve.
  3. Set the instant pot to 7 minutes on manual (high) pressure.
  4. Once it beeps (done), wait 1-2 minutes then release the pressure.
  5. Sprinkle with chopped cilantro (optional).
