So I love soup with grilled cheese ALL the time. So when I noticed I had hatch chilies going bad in my fridge. I had to think about what to make. So I come up with this Chicken and Hatch with Rice Soup. It really was easy and you can make in your Instant Pot and/or Dutch Oven. This will make enough for 4-6 people.
3lbs of Chicken
Splash of Olive Oil
1/2 cup of onion
2 cloves of garlic
2 tsp of cumin
1 tbsp of coriander
2 roasted hatch chilies diced (click here to see how to roast at home)
1 can of corn
1 can of salsa verde
5 cups of chicken broth
2 cups of water
1 1/2 cups of Rice
How to make
First place your Instant Pot on saute and place the garlic, onions and olive oil in.
Let cook till they are soft and then add in the rest of the ingredients except the rice.
Place your Instant Pot on for 15 minutes.
Once done you will take out the chicken and with a fork you can shred the chicken.
While you are shredding the chicken place the rice in the Instant Pot and cook for 5 minutes.
Now place your chicken back and mix up and serve .
If you don’t like soup while it is Hatch season you can roast your hatch and then freeze for when you want to make. It will stay good in the freezer for 4-5 months. This is great to be served with sliced avocado, sour cream and maybe even cheese.
