It is a Sunday and I am meal prepping for my week. This week I will be making shredded chicken with Borracho Beans in the Instant Pot and rice for my husband. Before we my Instant Pot we could have to sit around all day and cook in my crock pot but now it takes two hours to cook all my food and have in the fridge for the next day.
Borracho Beans in Instant Pot
I love using beans to make meals higher in protein but low in calories. This recipe is great by itself as a full meal, or alongside chicken or beef as a delicious addition, you’ll love. It’s simple to make, and full of delicious flavor!
Ingredients for Borracho Beans:
1 pound of pinto beans
1 1/2 cup onion
2 cans of Rotel
3/4 cup of cilantro
1 cup of diced cooked bacon
1 tsp of cumin (add in more for spice)
2 tsp of chili powder (add in more for spice)
1 tbsp of smoked paprika
3 tsp of fresh minced garlic
2 cup of water
3 cups of chicken broth
12 oz can of Negra Modelo
*you can omit, if you don’t want to use*
Directions for Borracho Beans in Instant Pot:
You will first soak your beans in your water for an hour.
Once the time is up you will drain the beans and place them in your Instant Pot.
Add in 1/2 cup of cilantro, the rest is for garnish.
Add the cumin, chili powder, smoked paprika, chicken broth, garlic, onion, bacon, and Negra Modelo.
Close the lid and then place your Instant Pot then click pressure cooker/manual mode for 70 minutes.
Once the Instant Pot beeps you can open the valve and let out the steam.
Then once all the steam is released open the lid and enjoy your warm fresh batch of borracho beans.
This recipe is so easy and a great spin on a regular Instant Pot bean recipe. You can easily add more or less spice to fit your needs, but we like it with a bit of kick.
